Approx. 1 pound Ground Pork (or ground chicken or ground turkey)
1 teaspoon Cornstarch
2-3 Scallions (green onions) minced finely

a small Dash of Sesame Oil (I like the toasted one)
2 or 3 Dashes of Chinese LIGHT soy sauce
a Smidge of Chili Sauce or Chili Oil if you like a little heat
Salt and Pepper if you like
One Package of Frozen Won-Ton Wrappers (The one’s I found at Loblaws and IGA are made by Wong Wing and are a 454grams (1 pound) package. Thaw them on the counter for a half day or so.
For each soup bowl: more chopped scallions (green onions), more soy sauce and more sesame oil.
Sprinkle the cornstarch on top of the ground meat, combine and let sit for a few minutes. Add your finely chopped scallions (green onions) and fresh ginger. Stir well to combine. Add dashes of sesame oil, Chinese light soy sauce and chili sauce or oil (optional). Add salt and pepper if you like.
Turn your wonton wrappers on an angle so they are diamond shaped. Put a SMALL amount (about 1/2 teaspoon) of meat mixture on and roll up. Add a dab of water to seal. Take up the two ends of the roll and twist together, dab with a bit of water to seal.
Boil water in a large soup kettle (pot). Add won-tons to boiling water. Once they float to the top, time them for approx 5-8 minutes, or to desired doneness.
In your soup bowl combine 2-3 dashes of Chinese light soy sauce, a drop or two of sesame oil. Stir to combine. Ladle in cooked wontons (you can add the cooking water to make a soup in your bowl). Sprinkle with fresh chopped scallions (green onions).
Any leftover meat mixture can be used for extra meatballs, drop them into the cooking water, or fry them in a pan.
Feel free to play with the ingredients to make a special won-ton just for you!
