1 Green Pepper
1 Red Pepper
3 branches Celery
2 Carrots ,medium size
2 Onions ,small size
4 cups Water
1 cup Vinegar
2 tbsp Salt
2 Green Chili Pepper ,sliced
2 Garlic Cloves
1 tbsp Sugar
1 tsp Dill ,ground, (optional)
2 tbsp Corn Oil Crystal
Directions
Separate cauliflower into small flowers, unseed pepper and cut into large stripes, cut celery into 5 cm pieces, peel carrots and cut into thin slices, cut tomato into wedges and cut onion into 4 quarters.
In bowl arrange vegetables in layers, sprinkle 2 tbsp cooking salt on each layer. Cover and leave for five hours then rinse with water and drain.
In a saucepan heat water and salt until dissolved then add vinegar and sugar and bring to boil. Set aside and leave to cool.
Arrange vegetables in a glass jar, add chili pepper, garlic, dill and vinegar water. Add 2 tbsp oil on top and close jar. Leave in room temperature for one week before it is served.

Pickling *does* preserve them. When you pickle vegetables in salt and/or vinegar (both natural preservatives), you are increasing their shelf lives. You can go further and make large batches and can (tin if you speak British English) them to make them last even longer.
Get a few jars,clean them thoughly in hot water ,dry them,put in what you want to pickle,add a mixture of salted water vinegar alittle oil and fill past the top of the pickle
Put on the cap,seal it tight,and leave for about 4 weeks.Should be done.
