We often experiment buying 'different' types of chocolate - or rather, my husband buys it! If it's not fit to eat - too bitter or too cheap and nasty - we use it for cooking.
I actually did mix some REALLY bitter chocolate with some too-sweet chocolate for choc-chip cakes once, and they were VERY popular! But the cake mixture itself is sweet. If your cookie recipe is relying on the chocolate to supply the sweetness, you could either add more sugar to the dough - rather than the chocolate - or you could use a recipe for simple sweet cookies without chips, and just mix in the chips as an extra. If the cookies are sweet, the bitter chocolate shouldn't matter.
It pays to remember that normal sweet chocolate only contains about 20 or 25% cocoa solids, the rest is mainly sugar, with milk, and various other junk I can't remember because I don't have any packets of chocolate in the house! Bitter chocolate can contain anything up to 99%!! So adding a 'little' sugar won't help much..! It should be OK to add milk though - I 'curdled' chocolate that I was melting once, and I added milk, stirred, and it ended up perfect! I don't know how MUCH milk you could get away with though...!!

I guess you could (when making the cookies) mix in a sweeter chocolate that will even out with the unsweetened chocolate. I've seen it done...but I'm not sure if it would work. I'm not much of a cook, and cookies are my down fall.

it will solidify and sweetnens ur c.c.cookie Here's a novel idea to use up the unsweetened chocolates. Put it in beef stew! French style. Really good!
