Those are all ways to roast a garlic, but not the way they do it at Johnny Carrinos. Here's what you do. Take about 2 heads of garlic, break it up, peel and chop all the cloves. You should have a nice little pile. Put about a cup of olive oil in a skillet. Add the garlic and cook until light brown. Watch it close and pull of the heat when the garlic is just the right shade of brown. The pour it out of the pan into a bowl or it keeps cooking. Then you can add the italian seasoning to taste. This keeps well in the fridge and the garlic stays crisp. My husband will eat this by the gallon. I also like to sprinkle a little salt in it. Enjoy!

roasted garlic is easy. take some tinfoil and put the whole clove of garlic in there with the small end cut off at the tip. drizzle some olive oil over the garlic with a little ground pepper. seal it all up and put in the oven on bake (like 350) for about 30 mins.

put whole bulbs of garlic in foil. Cut off the root end. Close foril and bake on 350 degrees F for about 20 minutes or until bulb is soft. Let cool for a few minutes. Squeeze the garlic, it wiil be a paste out into a small bowl. add a pinch of salt and olive oil to the top. Can be refrigerated for several weeks. Spread on crusty bread or add to sauces or smear on steak or mix with pasta.
They sell a terra cotta garlic roaster. Naturally, I have one, but you need one. Place your trimmed garlic on a roating pan or on a piece of tin foil, unlike anther post, I don't drizzle any oil. Bake in a moderate oven temp, say 250 to 300 degrees for an hour - it gets soft and spreadable and you can "pinch" the cloves out of the skin.

While I don't know about johnny carinos - I serve this with a good crusty bread (like a baguette or good Italian bread) along with goat cheese.

basic roasted garlic - peel outer skin & cut off roots of garlic heads. slice off top. dash w/ oilve oil, sprinkle w/ oregano, wrap in foil, & bake for 45 min. at 450/ until soft & browned.
