6oz (175g) Butter
6oz (175g) Caster sugar
3 eggs
6oz (175g) Self raising flour OR Plain flour with 3 tsps baking powder in
1 tsp vanilla essence
Set you oven to 180C gas mark 4. Grease one round tin or 2 round cake tins.
Mix the butter together in a large bowl until pale and creamy - then add the eggs - one at a time beating them in well before you add the next. Using a sieve gradually add the flour mixing it in a bit at a time. When all the flour is mixed in add the vanilla essence.
Either spoon all the mix in the one (deep) tin or it's better for a sponge to put it in two shallow cake tins - even out and put in the middle of the oven for about 15-20 mins! You will know when it's cooked because if you press your finger lightly on top of the sponge - it should bounce back OR put a skewer through the middle and if it comes out clean the cake is cooked! Turn onto a cooling rack and wait to cool! Fill with butter cream or whipped cream etc and bon appetit!
