unless you have a churn and a cow you go to the store and buy buttermilk
I get the powdered (Saco) buttermilk (just add water to reconstitute it). It has a longer shelf life.
I mix a full can of it with a full package of Buckwheat Pancake mix (Hodgson Mills), and store it all in a large plastic canister. To mix, start with one egg and a lil water. Stir in enough mix to desired thickness, and cook. That's all folks!
Sometimes I start with 2-3 eggs + a lil water...
It's so much easier to use a buttermilk mix or buy Bisquick and follow the instructions and use buttermilk instead of regular milk. LOL and enjoy.
natural yogurt is a good substitute for buttermilk if you can't get it.

If you don't have any you can put a teaspoon of lemon juice or white vinegar in a 1 cup measure and then fill the remainder with milk. Let it sit for a few minutes and you'll have sour milk that you can substitute for the buttermilk.
