Hollandaise sauce- good with poached salmon or chicken

175 G (6oz) butter
4 egg yolks
1 Tablespoon lemon juice or white vinegar
1. Melt the butter in a small Pan. Skim any froth from the surface and discard. Leave the butter to cool.
2. Mix the yolks with 2 tablespoons of water in a small pan. Beat a wire whisk for about 30 seconds, or until the mixture is pale and foamy. Place over very low heat and whisk for 2-3 minutes, or until thick and the whisk leaves a trail - do not let the pan get too hot or you will have scrambled eggs. Remove from the hear.
3. Add the cooled butter, a little at a time, whisking well between each addition. Try to avoid using the milky butter whey in the bottom of the pan. Stir in the lemon juice or vinegar, season to taste and serve immediately.

I use olive oil, chopped garlic, salt, pepper, basil. Lemon Caper sauce:

Peel one lemon. Remove membrane. Put lemon pulp, 1/4 c. capers, and 4 Tbls (half stick) butter in small sauce pan and heat through. Pour over fish.


I like to put this glaze over salmon.

3 tablespoons balsamic vinegar
1 1/2 tablespoons cornstarch
1 tablespoon orange juice
1 tablespoon brown sugar
1 (14-ounce) can seasoned chicken broth

Whisk balsamic vinegar, cornstarch, orange juice and brown sugar in medium saucepan. Add chicken broth and heat to a boil. Reduce heat to a simmer, stirring until the mixture thickens. Arrange salmon on serving platter and serve with sauce. Serve over hot white rice, if desired.
