1 teaspoon baking soda
1/2 teaspoon salt
1 large egg, lightly beaten
1 cup well-shaken buttermilk
Vegetable oil for brushing griddle
Preheat oven to 200°F.
Whisk together flour, baking soda, salt, egg, and buttermilk until smooth.
Heat a griddle or a large heavy skillet over moderate heat until hot enough to make drops of water scatter over its surface, then brush with oil. Working in batches and using a 1/4-cup measure filled halfway, pour batter onto griddle and cook, turning over once, until golden, about 2 minutes per batch. Transfer to a heatproof plate and keep warm, covered, in oven.
Cooks' note:
Batter keeps, chilled and covered, 3 days. Thin as necessary with additional buttermilk or water, 1 tablespoon at a time, before using.
Makes 14 (3-inch) pancakes.

buy an instant mix that you can make and use just one portion, or look at the box and it will say how to make 2-4 6-8 etc pancakes, also you can make some and freeze some then when you want a pancake you can pop it in the microwave, when you pack them let them cool first under a moist towel, and put a piece of wax or butcher paper between them so they don't stick.

This is our all-time favorite recipe for pancakes! It’s simple and tastes so good.
Ingredients:
2cups Original Bisquick? mix
1cup milk
2eggs
Methods:
1. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
2. Stir all ingredients until blended. Pour by slightly less than 1/4 cupfuls onto hot griddle.
3. Cook until edges are dry. Turn; cook until golden.
Note: If you like thin pancakes, use 1 1/2 cups milk.
