If you're talking about the different grades of olive oil, it has to do with when and how the oil was extracted. Extra Virgin, for example, is first press, no heat. just divide the amount into the quantities stated.
It will tell you in the recipie how much to use where. An example would be "use 2 cup olive oil, divided" That is use a part of the oil at one point in the recipe and the rest at another part of the recipe. The recipe should tell you when to use the parts and how much to use.
