LEMON BUTTER BROILED SALMON STEAKS
About 35 minutes before dinner:
1. Preheat broiler 10 minutes or as manufacturer directs. Into 1/4 cup mayonnaise or salad dressing stir 2 teaspoons prepared mustard. In small saucepan, over low heat, melt 2 tablespoons butter; blend in 1 tablespoon lemon juice, 1 teaspoon paprika, 1/8 teaspoon each of dried marjoram and pepper.
2. Lay two fresh salmon steaks, 3/4 inch thick, on foil lined broiler pan; brush with butter mixture. Broil, about 2 inches from heat, for 8 minutes or until golden, brushing once with butter sauce. Turn, brush with butter sauce, then broil 5 to 7 minutes or until salmon flakes easily, but is still moist. Serve, sprinkled with 2 tablespoons snipped parsley and garnished with 2 lemon twists; pass mustard sauce. Makes 2 servings.
For 4: Double ingredients; prepare as above; 1/4 cup commercial sour cream, seasoned to taste, may replace mayonnaise in mustard sauce.

1 part teriyaki sauce
1 part vermouth
1/2 part lemon juice
1 tbsp. melted butter
Mix teriyaki sauce, vermouth, and lemon juice; marinade for 2 to 3 hours prior to cooking. Put melted butter or more over fillets or steaks before broiling. Broil until salmon flakes.
BROILED SALMON FILLET
Cover a large cookie sheet (with sides) with foil. Lay one or two salmon fillets, skin side down, on foil. Cover fillet with 1/4 to 1/2 inch brown sugar. Lay onion slices on top of the brown sugar. Squeeze lemon juice over this. Refrigerate for at least 1-2 hours, spooning melted brown sugar and lemon juice back over the fillets every 1/2 hour.
25 minutes before eating, lay strips of bacon across the fillets. Broil on the lowest rack of the oven for 25 minutes. The bacon will turn dark.
