What temperature, for how long? On broil? Do you turn?

Answers:
I call this a "Ribbon Steak", because I use the seasonings to make the steak flavor a tiny bit different on each end and in the middle.

My technique:

Use Broil (use a broiling pan, or some type of pan that lets the juices run off)

2 to 3 minutes on each side (unless frozen, then 3 to 5 minutes on each side)

Try not to use a fork on the meat (more holes means less juicy steak)

Make sure oven is hot before putting in steak (hot oven helps steak keep juices in)

Before putting the meat into the oven, do the following to the top (You will do it again after you flip the steak half way through cooking.)
1. Smear butter on the steak (sirlon is lean, and the butter will make it juicier)
2. Add Garlic or Garlic salt to entire steak. If you use garlic, then add a little salt (sea salt if available).
3. On one end of meat, sprinkle a very small amount of black peppar or your favorite steak seasoning.
4. On other end of meat (this should be end with most fat), sprinkle a small amount of chili powder. I know this sounds crazy, but the fat in the meat and the butter, will react with the chili powder and taste nothing like chili. Trust me, this will be the best part of the steak.

Now, put in over, cook, take out, flip, season second side, cook, take out, test for done, eat.

Notes:
If it is a thick steak, you can microwave for a 15-20 seconds to help the middle get done. More than 15-20 seconds, and meat will be TOUGH.

Remove from oven a tiny bit early (cut small slit in meat to know when it done to your liking). The steak will cook a little more on the plate, so remove it from the oven a little bit early.

Salt, pepper and garlic powder both sides (rub into meat). Broil in oven with meat about 4 inches away from heat source. Depending on how you like it done turn it over after about 5 - 10 minutes. on the rack,set on broil. 10 to 15 mins sometimes less .make sure you steak is not frozen.you can turn.


Wrap in aluminum foil, with a little fresh rosemary. That's it. Bake as low as you can, for as long as you can (maybe 200, 6 hours). It will melt in your mouth.

Broil it on the top or next to the top. Get it up to temp BEFORE putting the steak in, and watch for flare ups. You may need to drain it now and then. Just watch the steak, flip and do the other side. It works surprisingly well!

I don't think you can broil in a convectional oven. If you mean conventional (no "c") I still wouldn't do it. But if you must...

Season both sides well with your favorite spices, etc. Put steak on a broiler pan. Broil on each side until browned - like "grill marks" browned, not just like the pale gray brown color like browning ground beef. Turn oven to bake on 350 until steak is desired doneness. The broiling should get you to at least medium rare. Use the touch method or an instant read thermometer to determine doneness. Because I don't know how you like your meat cooked, or how thick your steak is I can't give you an exact time.
