stupid question i know... do you need to use skewers/foil etc?
also what toppings/fillings do you suggest? (i have been sternly told that toppings are not the same as fillings.. by an extreme lover of potatoes and the like.. =P
Answers:
by saying "supreme jacket potato" im thinking that you want a stuffed baked potato? if so here is a great recipe. set your over to 500 degrees ( really) wash the potatoes and lightly cover with olive oil. I put the oil in a baggie and roll the potato around in it. then season with salt and pepper. On a baking sheet, spread a layer of rock salt, if not crumpled tin foil will work. Poke the potatoes with a fork a few times and bake for 45-50 minutes. When the potatoes come out they will have a wonderfully crispy skin.
In a medium bowl add 4 ounces of cream cheese, crumbled a few slices of cooked bacon, some salt and pepper and some shredded cheese. the cut the potatoes in half and scoop out the insides and add to the other mixture. Then re-=fill the potato skins, top with more shredded cheese and broil for 3-5 minutes until brown and bubbly.. these are YUMMEEE
