Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

i just brown it in a little bit of oil and then let it cook with the stew but it comes out a little hard and not tender at all. any ideas how i can stop this from happening? i follow the recipe diretions and it just doesn't come out right.

Marinate it first. Red wine is good. Next slowly brown over low heat. If you are making stew place the browned meat in pan or crockpot along with cut-up vegetables, water, and a little flour. Cook on low stirring frequently. Before serving thicken the gravy by stirring in more flour. Eat up!!!

simmer it for a long time in the stew...the longer you simmer it the more tender it will get.
I usually use a leftover roast for stew..you could boil it in a beef broth or other liquid until tender then add to stew, or plan time to let the entire stew simmer until the meat is tender..just make sure you add more liquid then recipe because it will boil down.

The longer you cook meat, the more tender it is. If you are in a hurry try and marinade it the night before. Bi carb in the cooking also helps, but it does alter the flavor a little. Good Luck
Are you using the right kind of meat? Not to say you don't know but most supermarkets will have a packaged stew meat. If you do as you said and brown it, then add to the stew it should be fine.
You may check the temp you cook the stew at. Crock pot?
Also, try coating the stew meat with a little bit of flour before you brown it.
Use a slow cooker or a pressure cooker. It is the best...takes half and hour rather than simmering over a fire for 3 hours!

tender meat takes time... simmer for a long time.. or boil on high for over an hour . as for pot roast, put in pan in oven with enough water to come up half way of meat. add salt pepper and garlic. cover with aluminum foil and bake for 2 hours on 325. will be fork tender
i do it in a crock pot, and let it cook all day, usually 8 hours before i get to it. it always works well for me.

Well, I suppose the recipes suck.Seer in the flavor with oil and cooking is good for steaks but not roast, unless you like rare. You can do it! Salt tenderizes, but don't get too much. I toss in flour, brown in butter and oil, then cook in crockpot til tender.If making stew, I put veggies in with the stock.
Maybe it is the cut of beef that you are using. I use well marbled chuck roast. I cut it up into 1" squares, brown it, and boil it with the veggies for about 3 hours. Always tender. Good luck!
Simmer the meat at least an hour (before) you put in the other ingredients! Brown it, then add water and simmer for an hour, then add the other things and simmer for another hour, till the carrots etc. are tender, by then the meat should be tender also! Good Eats!!
