3 unpeeled potates, boiled.
4 cups cabbage, chopped and blanched
1/2 medium yellow onion, peeled and chopped
1 zucchini, grated
3 slices bacon, chopped and browned (save the fat)
1/4 cup chopped ham
fresh-ground black pepper (to taste)
Mash the unpeeled potatoes with your hands (not too much, leave them quite lumpy). Add the rest of the ingredients except for the reserved bacon fat, and toss gently to mix.
Heat a frying pan (preferable non-stick). Place the bacon fat in the pan, and press the potato mixture in on top. Brown over medium-low to medium heat until golden brown on the bottom (his will probably take about 1/2 hour).
Invert onto a plate, and serve.

2 1/2 pounds potatoes, peeled and chopped
1/2 cup milk
salt and pepper to taste
4 slices bacon , cubed
1/2 small head cabbage
1 large onion chopped

Putting a lid on the pan helps the vegetables cook faster. Drain the cooked potatoes, mash with milk and season with salt and pepper. Fold in the cabbage and onions, then transfer the mixture to a large serving bowl. Make a well in the center, and pour in the melted butter or else make it into a cake and fry till browned. Serve immediately with hot mustard on the side or horseradish. I also frequently use packaged mashed potatoes with cheese instead of making mashed potatoes from scratch. In that case, omit the melted butter. And one can use half a pound of smoked sausage instead of the bacon.

Cut the leftover beef and fry in the drippings.
Chop a small cabbage, parboil it add to fry beef and let simmer until the cabbage is done. Finish with seasoning and a dash of vinegar.
