This is from my personal recipe collection. Its also one I love.
PASTA CARBONARA
4-6 bacon slices, diced
3 tbsp. chopped onion
1 clove garlic, minced
1 c. heavy cream
8 oz. thin spaghetti or fettucine
1/4 c. grated Parmesan cheese
1/8 tsp. ground pepper
2 tbsp. chopped parsley
Optional additions: Sauteed boneless chicken, mushrooms
In large skillet over medium heat, cook bacon about 3 minutes or until limp. Add onion; cook 3-5 minutes longer or until bacon is browned, stirring occasionally. Add garlic, cook 30 seconds. Drain all but 1 tablespoon bacon fat from skillet. Stir in cream; bring just to boiling point. Reduce heat to low and simmer 3 minutes. Keep warm.
Add cooked spaghetti, Parmesan cheese, pepper and parsley to cream mixture. Toss to coat spaghetti well. Serves 4-6. Prep time: about 10 minutes. Cooking time: 10-15 minutes.

2 tablespoons and 1-1/4 teaspoons butter
10 ounces cooked ham, cut into 1/2 inch pieces
4-3/4 cups half-and-half
1 cup and 3 tablespoons grated Parmesan cheese
1/4 cup and 2 teaspoons chopped onion
1-3/4 cups and 1 tablespoon frozen green peas
11 ounces fresh cheese-filled tortellini
DIRECTIONS:
Melt the butter in a large skillet over medium heat. Stir in the onion and ham and saute for 5 minutes, or until onion is translucent.
Pour in the half-and-half and the cheese, stirring frequently, until the sauce starts to thicken and bubble. Season with salt and pepper to taste and set aside.
Fill a large pot with water and bring to a boil. Add the tortellini and cook to desired doneness, or according to package directions. Add the peas to the boiling tortellini in the final minute of cooking. Drain all from the water and toss with the ham and sauce mixture. Serves 6.
