#1 peanut oil, #2 beat an egg and dip the chicken in it first #3 mix flour salt pepper and dip the chicken in this after the egg, fry in the peanut oil, meat side down first......the trick is that the oil needs to be hot but not so hot that it fries too fast, if its smokin its too hot. And by the way you can coat and recoat the chicken before frying just keep dippin it in the egg and then the flour.

dip it in flour, then beaten eggs, then flour again and fry it in a skillet over med to med-high heat!!! Cook until golden brown, about 20 or so minutes.
buy some shake & bake at the grocery store follow the directions on the box. It is great and easy!!!
I dip mine in flour and fry it in margarine. Another way I fix it is to dip in flour and brown on both sides about 5 minutes then put it in the oven and bake for an hour. It taste just like fried but without the hassle of turning it all the time.
Preheat your fryer with canola oil. Make sure the chicken is defrosted if using frozen. In a ziplock bag add cornstarch, salt, pepper, a dash of garlic powder and paprika and shake to mix. Add several pieces of chicken to the bag and shake to cover. When the oil is hot add chicken (making sure to shake off the excess cornstarch first) into the fryer. Do not overload. Depending on the size of the pieces, cook for 15-20 minutes. Drain on paper towels and enjoy!
