1 lb. mixed vegetables
2 tbsp. melted butter
1 tbsp. ground coriander

1/2 tsp. ground black pepper
1/2 tsp. ground turmeric
2 green chilies, sealed/sliced
2 1/2 tsp. salt
1/2 tsp. black mustard seeds
1 sm. onion finely sliced
Wash, soak lentils for 2 hours. Drain, cook in water until soft. Soak tamarind in hot water; cool, squeeze pulp. Add lentils. Chop vegetables into small pieces (use 1 package frozen chopped vegetables).
Heat 1 tablespoon oil over low heat; fry ground spices for 1-2 minutes. Add to lentils with chilies, salt, vegetables. Cook until vegetables are soft, about 30 minutes. In 1 tablespoon oil fry mustard seeds and sliced onions until brown. Add to lentil mixture. Simmer for 2 minutes; serve.

Preparation
Cook Tur Dal in two cups of water, when half cooked add pieces of drumstick, potato, brinjal, lady's finger, onion, tomato pieces, and salt. Cook till dal is very soft. Dissolve sambar masala in little water and add it to the cooked vegetables. Take the pulp of the soaked Tamarind and add, blend well and cook. In another pan heat oil and add mustard seeds. When they stop spluttering add chopped garlic, methi seeds, dried red chilli pieces, Asafoetida and curry leaves. Fry for two minutes and then add to dal vegetable mixture and boil it for 1 minute. Finally add chopped coriander leaves on the top.
Vegetables required - Onions, Raddish, potato, green peas,drumstick, green peppers(Capsicum), pearl onions, okra, eggplant, pumpkin, chowchow
Heat 2 teaspoons of oil and add 1 tsp mustard seeds.When the mustard splatters add 1/2 fenugreek seeds and 1/4 tsp asafoetida. Add any of the vegetables (cut into large pieces) and fry lightly.Add 2 cups of water and allow it to boil.Add 1 teaspoon salt, 1 1/2 teaspoon sambar powder and tamarind juice(amount vary to taste). Heat until the raw smell of tamarind is gone.Then add 1 cup boiled toor dal(like paste) and heat until it mixes uniformly.Add a teaspoon of kari masala powder.
If you want to use fresh paste, you may grind Sambar paste and add it to the sambar instead of kari masala powder. Add a bunch of curry leaves.
