Answers:
They normally use a swiss-roll type sponge, for example http://www.cookitsimply.com/dessert/cake-recipes/swiss-roll-0011-0268u1.html
but they cook it in a couple of sponge tins instead of a swiss-roll tin,

The cream is normally whipped with a couple of teaspoons of sugar added. Just normal granulated.

Here are some Japanese recipe pages with pictures of the finished cake;

In Japanese delis they are much more posh ;-) http://www.deli-cake.com/list.cgi?id=G030000056

Some people will brush warmed jam (apricot or strawberry) on top of the lower sponge, some will only use strawberries on top, some will use sliced strawberries inside, or halved strawberries on top, some will make a tower or arrangement of mixed berries on top, but basically people just decorate them however they want, to suit their own tastes.

If this sounds like a European style cake it's because it is. Japanese culture originally didn't have any products like cakes or bread, but they were willingly absorbed into people's lives via foreign visitors - originally Portuguese visitors.
