I do this when I want a clean base for sauces and dressings - it's great for shellfish and oils.

4 bunches fresh parsley
4 to 5 cups ice
blender
cheesecloth or chinois (fine mesh strainer)
4 cups water room temp
2 qt sauce pot

Add parsley and 4 cups room temp water to blender and blend very well, until smooth - about 3 to 4 minutes.

Put in a sauce pot and over meduim heat bring to almost a boil stirring constantly with a wooden spoon. As the liquid mix is coming up to temp and almost at a boil, you will see it start to separate into a "fat" type substance that will start to stick to the spoon.

Dump ice into sauce pot and stir a bit to cool liquid, then pour into cheescloth lined strainer or fine mesh strainer with a bowl underneath. You should see the water coming out of the bottom run clear, leaving the clorophyll in the cheesecloth.

Use as a base - it is one of the purest flavors you will ever taste.

put parsley in a food processor and grind until fine. Pour into cheesecloth and squeeze the juice out.
Chop parsely finley, place in a teatowel and hold under running water, squeezing until the water runs clear, squeeze the excess water out and place in a jar, this will now keep 'fresh' for days in the fridge.
