I warm the tortillas in an oven for 3 minutes at 250 degrees. You could probably also microwave them for a couple seconds. It seems that heating them up makes them soft and a bit moist, then they stay closed better.
Make sure you're folding properly, too. Fold from the bottom up, then the sides, then tuck in the top. Folding should be done pretty tightly.
Hope that helps!
If you bought a Burrito kit it should have instructions on how to fold them on the back. I know the Old Elpaso packets do.
I use a tooth pick until it gets a little stiffer.
put a line of stuff in the middle but not too much. roll the side over the stuff. fold the bottom up and tack it down with refried beans so you have a bottom and not a tube. fold the other side over and tack it down with refried beans. You should now have a tube but with a bottom so the stuff doesnt fall out.
I use refried beans like paste. I dunno if that is how restaurants do it.
The hard part is not putting too much stuff in it but getting enough.

like they said, but in order to make sure the burrito stays together, but the after it is wrapped, put it on the grill/griddle/frying pan, for a few minutes to seal it up.
roll up almost halfway, then fold in sides, and continue to roll until tight.

That's a great question. I bought spelt tortillas from Trader Joes last week. I put them in the fridge on Sunday, and today, they were broken up.
Maybe you keep them at room temperature.
ha...this is how I was taught when I worked at Taco Mayo:
Fold the end (longways near one side of the filling) inward toward the filling, then fold one side over and pull it back so that the filling is tight inside then fold the whole thing over. ...
got it?
Me neither.
I fold a flap over the bottom and then wrap like normal around the sides. This makes a little pocket in the back end to kepp your junk from fallin' out! Don't want that!
