for stir-fried dishes such as veggies, always put chopped/minced garlic into a heated wok containing some oil and stir fry them till they're golden brown and emit a strong aroma, only then do you put in the veggies. don't put the veggies before the garlic is golden brown or the veggies will lack "fragrance". another secret of chinese food is the use of lard. it sounds extremely unhealthy and yucky but trust me, majority of chinese food contain it. use lard instead of usual oils and you can taste the difference.
