This is my brownie recipe. They always come out moist and fudgy for me!
Ingredients:
1 1/4 Cup Swans Down Cake flour (at the grocery store in a red box)
1/2 tsp salt
3/4 tsp Baking Powder
6 oz. Unsweetened Bakers Chocolate broken into pieces
12 Tbls (1 1/2 sticks) Unsalted butter cut into 6 pieces
2 1/4 Cups sugar
4 eggs
1 Tbls. Vanilla extract
Preheat oven to 350 degrees. Prepare a 13x9 baking dish by placing 2 strips of foil crosswise, layered with cooking spray.
In a medium bowl, mix Flour, Salt and Baking powder. In a double boiler (mixing bowl over sauce pan of barely simmering water) melt chocolate pieces and butter until smooth. Transfer chocolate mixture to a large mixing bowl, and add the sugar, mix well. Add the eggs one at a time mixing well with a wire whisk after each addition. Add Vanilla. Fold in the flour mixture with a rubber spatula in parts until smooth. Spread into baking dish evenly and bake at 350 for about 30-35 minutes or until a toothpick comes out clean. Remove from oven and place on wire rack until room temperature (about 2 hours) then cut into pieces and they are done!!

I enjoy baking so I'm a little embarrassed to admit this, but I have never been able to make moist, fudgy brownies from scratch. They all turn out more cakelike. The best brownies that I've made have always been from a box mix. The secret to keeping them moist is to NOT bake them too long. The middle should still be shiny, and you should test for doneness with a toothpick about halfway between the edge and the middle. If you don't have crumbs on the toothpick, you're done.
By the way, you can take the brownies a step further and turn them into an awesome dessert called Death by Chocolate. Use a brownie mix for a 9x13 pan. While that is baking, make a box mix of chocolate mousse (it's by the Jello) When the brownies are cool, break them into bite sized pieces into a large bowl. Sprinkle three or four tablespoons of Kahlua over them and toss to distribute the Kahlua. Put half of the brownie mixture in the bottom of the pan, then half of the chocolate mousse over that, and finally half a medium container of Cool Whip. Repeat the layering and refrigerate until you're ready to serve. It's very rich, so cut it into small pieces. You may have to adjust the amount of mousse and Cool Whip - I don't have a written recipe for this, and I don't remember if there were one or two boxes of mousse.
Good luck with the brownies! Try using a few more tablespoons of oil than recommended. This will make them moister and chewier!
