HOMEMADE APPLE CINNAMON PANCAKES

1 egg
1 1/4 c. milk
2 tbsp. vegetable oil
1 1/4 c. flour
1/2 tsp. salt
1 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. soda
1 tsp. cinnamon
1 sm. green apple, peeled and grated

Blend egg, milk and oil. Mix dry ingredients and apple together. Mix together. Pour large spoonfuls onto griddle. Cook until done.

HOMEMADE PANCAKES

2 c. white flour
3 tsp. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
2 c. buttermilk
2 tbsp. cooking oil
4 eggs

Mix first 5 ingredients; stir and set aside in a large bowl. In a smaller bowl, mix 4 eggs well and add 2 cups butter, milk and 2 tablespoons cooking oil. Blend with dry mixture, stir. Do not over mix; batter need not be smooth. Bake on a greased griddle.
