Any ground meat mixed with bread crumbs, eggs, onion, celery, and spice to your taste. Cook for the recommended time... usually about 60 minuets at 350 degree's or until done.

Tomato Relish:
Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
Meatloaf:
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
11/2 pounds ground beef
1 pound ground pork
3 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices
Preheat the oven to 350 degrees F.
Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!
2 LBs ground beef 85% lean

1 onion diced real small

salt pepper

1 egg, 2 eggwhites

1 envelope of onion soup mix

ketchup

mix it all up together and shape the meatloaf in a roasting pan
preheat oven 350 degrees

cut up potatoes and surround the meatloaf but a bit of salt on the potatoes and italian seasoning

let cook for about 1 hour check to see if it cooked inside if not leave in another 10 min keep checking every 5 min after that.


ohh add a bit of water to the roasting pan before sticking it into the oven.
Take about 2 pounds of hamburger and put it in a bowl. Add 2 eggs, salt and peper, and about 1 tsp of garlic powder. Mix. Add about 1/4 cup of dried onion flakes, 1/2 cup (or more) of garlic croutons, Mix and press into a loaf pan.

Topping:
1/2 cup ketchup (hienz)
3/4 cup brown sugar
a few dashes of worceschester sauce
3 tablespoons dry mustard.
Mix and spread on top of the meat loaf.

Bake at 350 for about an hour.
You may have about 2 lbs of hamburger (??), I don't know how many people you would be cooking for. Add 1 cup cooked rice, cooled, add 2 eggs, then you can add some vegetable if you like, mixed (whatever) 1 cup. Cook at about 350 degrees for about 1 hour. I never follow a recipe for this one. Each one can be different. Enjoy!!!

Southwestern-Style Meat Loaf
This meatloaf is packed with flavor, and it's delicious served with salsa.
INGREDIENTS:

* 1 pound ground beef, lean
* 3/4 to 1 pound ground veal
* 1 egg
* 1/2 cup fine dry bread crumbs
* 1 can (approx. 4 1/4 ounces) chopped ripe olives
* 1 can (4 ounces) chopped mild green chile pepper
* 1 cup corn kernels
* 1/2 cup salsa, plus more for topping
* 1 teaspoon onion powder
* 1/2 teaspoon garlic powder
* 1/8 teaspoon pepper
* 1/4 teaspoon salt, or to taste

PREPARATION:
Combine all ingredients except topping in a bowl and combine until blended. A wire potato masher works well for mixing meatloaf. Pack into a loaf pan and bake at 350° for about 1 hour and 15 minutes.
Serves 8.
1 1/2 pounds ground beef, 1 envelope Lipton onion soup mix, i egg, couple shakes of worchestershire sauce, 1 can tomato sauce, oatmeal to thicken and hold in shape, salt and pepper, garlic powder...............form into a loaf and cook, about 325 for an hour. About 10 minutes before you take it out cover top with a little tomato sauce. Another thing to use instead of tomato sauce is that stuff Hunts makes called "meatloaf fixins" I have had good luck with that too, but I always use oatmeal instead of crackers or breadcrumbs. Makes 10 Servings

2-1/3 cups coarsely crushed soda crackers (1-1/2 tubes from package)
2 pounds lean ground beef
1/2 pound breakfast sausage patties
1 large egg
2 medium onions, chopped
1 medium green bell pepper, minced
3/4 cup ketchup plus 1/4 cup for the top
1/3 cup Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper

1. Preheat the oven to 325 degrees. In a heavy-duty, plastic food-storage bag, place the crackers, seal, and roll over with a rolling pin until crushed but not powdery.

2. Take any rings off your fingers and send them to me! In a large bowl, with clean hands, mix together all the ingredients except the 1/4 cup ketchup for the top. Mix thoroughly but lightly, being careful not to pack the meat too much. Place in a 13 x 9 x 2 inch baking pan and shape into a loaf. Cover with aluminum foil.

3. Bake in the 325 degree oven for 45 minutes. Remove the foil. Spread the top of the loaf with the 1/4 cup ketchup. Bake, uncovered, another 60 minutes. Let stand for 10 minutes before slicing.

2 lbs Ground chuck
1 Large onion, finely chopped
1 cup Breadcrumbs
2/3 cup Chili sauce or ketchup
2/3 cup Parsley, finely chopped
1 tb Worcestershire sauce
3 Eggs, lightly beaten
1 tsp Salt
1/2 tsp Black pepper

Preparation
Preheat oven to 350. Combine all ingredients in a large bowl and mix with your hands until well-blended but not overmixed.





Fill lightly greased 9 x 5 inch loaf pan with mix. Put pan on baking sheet and bake until meat is firm and has shrunk from the sides of the pan, about 1 1/4 hours. Pour off excess fat and let sit 15 minutes.

ground-round beef, 1 egg, italian bread crumbs, salt, pepper, garlic powder, (onion opt). grated cheese, diced tomatos or a little tomato sauce. Mix & shape. add tomato sauce to top- put foil over it loosly. take foil off last 15 min.
The tomatoes make it stay real moist. You can also sprinkle the shreded tex-mex cheese in the mixture.
Please do not use oatmeal or celery in your meatloaf as suggested by some.



2 pounds ground round or meatloaf mix with pork / beef
1 medium onion, diced
1/2 can tomato paste, reserve other 1/2
salt, pepper, garlic powder (a bit)
1.5 cups seasoned bread crumbs
1 egg
3 cans tomato soup + 2 cans water

Mix everything but the soup and the water and the 1/2 can tomato paste, form loaf, put in a roasting pan, mix the soup and water, spread the paste on top of the meatloaf and then add the soup/water to the pan. Bake at 350 for 30 minutes, covered and then turn the oven down to 300 for 30 more minutes.
I do have one comment....I do not like these people that look things up online and cut and paste them. I mean some people could not be cooks and even know what they are posting, how it tastes. Anyway.....

Meatloaf can come in many forms. It depends on what your taste is. Most people just use the meat hamburg. However there are also those that use many other ground meats also. Some use ground turkey, ground pork,veal and/ or sausage.

Here is a receipe that works for the hamburg based one:

Get about 2 lbs of ground meat (I would reccomend something around 85%-90% lean...too much fat it is greasy and too little it is too dry)

Then add about 1/2 cup of bread crumbs to 2/3 of a cup. It depends on the bread crumb and the meat. You do not want it too dry.

Add one egg

Then add your spices. Here you can have some fun. You can make it basic, italian, or even mexican/spanish tasting. I personally add parsley, adobo or lawrys, pepper and a little salt not too much as the adobo and lawrys is already salty enough.

After this I put about 1/2 cup of chopped onion.

Next I put some extra virgin olive oil in it. By this time you should have a good feel of the meat mixture and how dry or wet it feels. If it is more wet only put 2 tablespoons in. However if it feels more dry I would put 4 tablespoons in. This also helps it not stick to your pan.

Then shape it as you want. Some just put in a pyrex dish and shape it like a half circle and others put in a bread pan. Either way works. After this you can put Heinz (the only ketchup I reccommend) on it. If you want to have fun you can put bbq sauce on it too.

Bake it at 350 degrees for about an hour to an hour and a half. Since it is 2 lbs it will take more like an hour and a half just to be safe! :)

The great thing about meatloaf is the fun you can have with it. My sister makes one with fresh mozerella and basil rolled in it and puts a tomato sauce on it rather than the ketchup. I have done one with turkey and added a mexican cheese to it and spices to compliement it and put salsa on it. These both were great. One more point if you mix meats, make sure they are compatible and make sure you only use about 1 lb each. You can also add peppers and onions and even fresh garlic too!

I just take about 2 lbs of hamburger and add bread crumbs, ketchup, and some spices (sometimes garlic and onion powders, sometimes just some parsley). I make it into a loaf and cook it at 350 for about 30 minutes.

It's a simple and easy way to make meatloaf without having to make a special trip to the grocery store if you don't keep onions and the like on hand. And best of all, it's cheap!
I never have like the recipes that call for ketchup or onion soup mix.

I just do the following and use my best judgment on what to add:

2 pounds ground hamburger
1/2 pound of jimmy dean hot sausage
1/2 sleeve of saltines
3 eggs
1/2 white onion diced
salt & pepper to taste

1 can of Cream of Mushroom soup.

Mix all ingredients but soup in large bowl. Turn into loaf pan and spread soup over top of meat to cover.

Bake for 45 minutes to an hour at 350 in oven.
Ground beef preferably lean. 2 eggs, peppers diced onions diced seasoning mold into shape and put ketchup on top and bake. 425 for bout 30 min or so.
