I never use an egg batter for much of anything. Here is the delicious batter recipe I use. It's very simple:
3/4 cup flour
2 tablespoons cornstarch
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
3/4 cup water
Mix all ingredients together. Slice and seperate your rings and dip them in the batter. Deep fry in peanut or other suitable frying oil until golden & crispy.
I guarantee you'll love them!!

If you don't want to use eggs in the batter try a beer batter or just a buttermilk batter
so far i can just find this one i you dont put egg in it so try it
OVEN FRIED ONION RINGS
1 lg. Bermuda onion, cut into 1/4" thick slices & separated into rings
1/2 c. milk
3/4 c. plain dried bread crumbs
1 tsp. chili powder
1/2 tsp. salt
1 1/2 tbsp. cooking oil
In 9"x13" glass dish, combine onion and milk; let stand 30 minutes, turning frequently. On wax paper, combine bread crumbs, chili powder and salt. Preheat oven to 450 degrees. Spray cookie sheet with Pam. Put onion rings into bread crumb mixture and coat evenly. Place onion rings on cookie sheet and drizzle with oil evenly. Bake about 5 minutes on each side.

Let excess batter drip back into bowl. Fry a few at a time, 2 to 3 minutes or until golden brown. Drain on paper towels. Serve immediately or keep warm in 175 degree oven.

jiffy cornbread mix then fry them in a fry daddy also you can make a few hush pupppies while you're at it
bisquick mix and bottle of beer.

I slice the onion and soak them in a bowl of buttermilk before dipping them in whatever flour mixture I decide to coat them with. The buttermilk holds tight to the breading for easy, crisp frying!
just use a flour/breadcrumb mixture-and make sure the onions have some sort of moisture to them-actually beer or milk would be good

1/2 tbsp. paprika
1/2 tbsp. salt

1/2 cup buttermilk
Vegetable oil for frying
1. Slice the onions into 1/4-inch-thick rings. Soak the slices in a bowl of water for at least 30 minutes. In the meantime, prepare a baking sheet with three layers of paper towels.
2. In a large bowl, mix together 1 1/4 cups of flour and the cornmeal, cornstarch, baking powder, spices and sugar. Put the remaining flour in a second bowl. In another bowl, combine the milk and buttermilk.
3. Pour enough oil into a large, heavy saucepan to reach a level of 2 inches. Heat to 360 degrees, using a candy thermometer to check the temperature. Heat the oven to 275 degrees. Drain the onions well.
4. Working in batches of about 12 rings, dip the rings in the plain flour, then into the milk mixture, then into the spiced flour. Cook until golden brown, about a minute for each batch. Allow oil to reach 360 degrees again between batches.
5. Transfer the rings to the paper-lined baking sheet and drain well. Remove the paper towels and keep the rings hot in the oven.
