sift:
one cup flour
2 teaspoons baking powder
one-quarter teaspoon salt (not needed)

beat and add:
one egg (optional)

add:
1 cup milk (scant)
stir gradually to make smooth
add:
1 teaspoon melted butter or oil

cook in a hot frying pan, flip pancakes when they bubble, to brown the other side.

Serve with maple syrup.

Thats it. Its that easy, enjoy!

1 1/4 cups flour
1 egg
1 1/4 cups buttermilk
1/4 cup sugar
1 teaspoon baking powder -- heaping
1 teaspoon baking soda
1/4 cup cooking oil
pinch of salt
cooking spray

Preheat skillet over medium heat. Use pan with nonstick surface and apply pam spray. In blender or with mixer, combine all ingredients until smooth. Pour batter by spoonfuls onto the hot pan, forming 5 inch circles. When edges appear to harden, flip the pancakes. They should be golden brown. Cook on other side. Makes 8 pancakes.

I start by beating an egg until it is REALLY frothy. Then I add 3/4 cup milk and 2 T vegetable oil. In another bowl, I mix 1 cup flour, 1 T sugar, 3 teas. baking powder and 1/4 teas. salt. I add the dry ingredients slowly into the egg, milk and oil mixture. I mix it just until it is incorporated.

I think the trick is to get the egg really frothy before mixing in the dry ingredients.


In a small bowl, mix together 1 egg, and 2 tbsp. of water. Beat until frothy.

In a large bowl mix together 2 cups of unbleached flour, and 1 tsp. of baking powder.

Add the egg mixture to the flour mixture and stir. It will come out being a little cakey. Now add 1 cup off nonfat milk, stir again. Add a very small amount of clear vanilla extract for flavour.

The end result will turn out looking lumpy, and gooey, but trust me, it's excellent!

Using a small griddle that has been buttered, ladel batter into fist sized circles. When the pancake beins to bubble on the top, it is time to flip it. Count to 40, then they are ready to serve. ENJOY!

Beat egg well in medium sized mixing bowl, then add other ingredients and mix just until combined. Batter should be a bit lumpy. Heat a skillet or griddle about medium heat (I like to go a little under so I get golden brown pancakes, not black ones), and cover surface with cooking spray, butter or margarine (Before each batch I put in more spray to be sure they don't stick and add flavor). Pour in at desired size. 1/4 cup batter makes small pancakes, 1/2 cup makes decent sized ones. I use a liquid measuring cup with pouring spout so it's easy to pour with no mess. When you see the batter bubble in the middle, turn the pancake carefully with a large spatula. Stack the pancakes separately on a large tray or plate to avoid soggy pancakes. I butter them as they come out, but you can put the butter on the side also to avoid sogginess. Serve with fresh fruit, soft-cooked eggs, peanut butter, jam or the all-time favorite, Maple syrup.

Other tips: If you want to make breakfast more fun, get pictures of some of your favorite cartoon characters and pour your batter in the shapes of the characters, or use metal cookie cutters to pour in. A few drops of food coloring can make pancakes even more fun.

If you like nuts or fruits, you can add them to your pancake batter as well. Apples (add a pinch or two of cinnamon and be sure the apples are chopped fine or shredded), raisins, blueberries, pecans and walnuts are all old pancake favorites. But you can try adding strawberries, blackberries, peaches, crushed almonds, preserves, or whatever else takes your fancy, to experiment.
