I just buy it in the tube (it looks like the same wrapping ground sausage is wrapped in). You can buy it plain or flavored. Sun dried tomato is good. But, I slice it into circles and heat it in the oven and sprinkle some grated parmesean cheese on it until it melts.

Polenta is a good substitute for rice or pasta. To make it, do one part polenta with 3-4 parts water/stock. Season it as you would rice - You have to keep your eye on it, though, stirring often, as it has the tendency to bind quickly because it expands. even before it's done.
