You won't get this at any ballpark!
This is Mac and Cheese Dog Casserole
1 pound elbow macaroni
Salt
2 tablespoons extra-virgin olive oil, divided
1 package beef or pork hot dogs, chopped into 1-inch pieces
1 tablespoon butter
1 medium onion, finely chopped
2 tablespoons all- purpose flour
1/2 cup beer, 1/3 of a bottle – whatever you have on hand, chicken broth can be substituted
2 cups milk
Pepper
1 rounded tablespoon spicy mustard
2 rounded tablespoons ketchup
3 cups yellow sharp Cheddar, shredded, divided (Buy preshredded cheese. You will need 1 1/2 sacks of 10-ounce packages.)
Boil a large pot of water for macaroni. Salt water and under cook macaroni, cook about 7 minutes until just under al dente in doneness.
Preheat broiler and set rack 12 inches from heat.
While pasta works, heat a large deep nonstick skillet over medium-high heat. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, then add hot dogs and brown on both sides, 4 minutes total. Remove the dogs with a slotted spoon to a paper towel lined plate. Add another tablespoon extra-virgin olive oil, 1 turn of the pan, and the butter. When butter melts, cook onions 4 to 5 minutes, then add flour and cook another minute. Add beer and cook off completely, 1 minute. Whisk in milk and bring to a bubble, then season the sauce with salt and pepper and stir in the mustard and ketchup. Lower heat and add 2 cups of the cheese. Stir to melt, 1 minute. Adjust mustard, ketchup, and salt and pepper, to your taste.
Drain pasta well. Combine pasta and hot dogs with sauce and coat evenly then pour into large casserole and top with remaining cheese. Melt and brown cheese under broiler, 2 minutes. Serve.

ah, my son would love to talk with you. when he was little I made it in the box and when he got older he went to daycare where the lady made it from scratch. Well, after seeing how she did it I made it the following....and he loves it!
You just make mac & cheese in the box like you normally would and when it is mixed together in a bowl add a cup of your favorite cheeses, mix and match if you would like, our faves are mozarella and parmesan. pour the mix into a prepared baking dish and top with more grated cheeses of your choice. Bake for 15-20 minutes at 350 degrees. yum! Best wishes =)
BEST MACARONI AND CHEESE
2 c. (8 ounces) elbow macaroni

1/4 cup minced onions
3 tbsp. flour
2 c. of milk or light cream
1/2 c. dry white wine (or water)
2 c. grated sharp cheddar (1/2 pound)
1/2 cup bread crumbs (topping)
Salt and freshly ground pepper
Cayenne to taste 1/2 tsp. paprika
Bring 4 qt. salted water to a rapid boil and cook the macaroni until not quite tender. Drain macaroni and set aside.
In saute pan, melt 1/2 the stick of butter (or 4 tablespoons). When melted, stir in the breadcrumbs and toast just until lightly browned. Remove breadcrumbs from pan and set aside. Wipe pan clean with paper towel and re-use for next step. Breadcrumb topping: Melt remaining butter, add onions, and stir over low heat until onions are just translucent, but not browned. Stir in the flour and seasonings. Continue to cook for an additional 2-3 minutes. Add the wine, then gradually stir in the milk or cream.
Simmer over low heat, stirring constantly until the sauce is thickened and smooth. Add cheese and continue stirring until the cheese melts.
Combine the macaroni with the cheese sauce. Turn out into a generously buttered casserole dish (approximately 1 1/2 quarts). If you have any extra grated cheese, you can sprinkle this on top along with the 1/2 cup of buttered, toasted bread crumbs.
Bake in a preheated 350 degree Fahrenheit oven for approximately 20 minutes or until heated all the way through and golden brown on top.

Mix 4 tbsp flour into 2 cups milk, add 2 tbsp butter, 1 tsp salt, 1/4 tsp pepper and bring to a boil, stirring often to prevent flour from clumping and burning
When it boils -immediately reduce heat and simmer for 1 minute, stirring constantly (should be thickened)
Remove from heat and add 1-1/2 cups of shredded cheese (whatever floats your boat cheddar or a mix of your fav cheeses)
mix macaroni and cheese sauce mixture in a large bowl
coat 9"x13" glass/ceramic baking dish w/ non-stick spray and pour in mac and cheee, top with 1/2 cup shredded cheese and bread crumbs
Bake at 350 for about 25 minutes (longer if you like browned top, shorter if ya don't)
I havn't had that since I was a kid. My mom used to make it. YUMM!!! Maybe I wil make some tonight.

here's my mom's baked mac & cheese. it's not really creamy...it's cheesy, but sinceit's baked it not that mac & cheese goo. it's a favorite at all of our family picnics and sometimes i jsut crave it! of course mine is never as good as hers;)
1 lb. Mueller's elbow macaroni
2 blocks of Cracker Barrel Extra Sharp Cheddar cheese (whole not the 2 %---mom says doesn't melt right)
salt
pepper
bit of milk (will explain)
boil macaroni for about 10 minutes. don't over boil it or else it will be squishy once baked.
while macaroni is boiling either thinly slice or grate your blocks of cheese. i grate mine and i use about 1 1/2 blocks. mom slices hers (thin) and she usually ends up using a bit more than me.
strain elbow noodles and pour half on bottom of glass 9 x 13 pan. salt and pepper noodles well. cover totally with cheese slices or with grated cheese. then pour on remaining noodles. salt and pepper again and layer rest of cheese. be sure to cover the top with cheese or else exposed noodles will burn and get crispy.
then, pour on enough milk to just cover the bottom of the pan. since it is glass you can see when it is jsut covered.
bake at 365 for about 30-45 minutes (depends if you like some crispy edges).
soooooo good!
EDIT:
you can chop up onions to put in it, but i don't like em so i don't!
