i think if you add Barbeque sauce to it that is why it goes red. i am not 100% sure if not try calling a Chinese take away and asking them although they may not give away their recipies.

Funnily enough I asked this question in a chinese restaurant in Spain about a month ago. They told me it is a sweet & sour sauce. I tried to find it in ASDA but without success.

try saffron
add lots of chili powder with sudan 1 in it or use tomato powder/paste
