Rhubarb Coffeecake
1/2 cup butter or margarine
1 cup granulated sugar
1 egg
1 tsp. vanilla
2 cups plus 2 Tbsp. flour
1 tsp. cinnamon
1 tsp. bakig soda
1/2 tsp. salt
1 cup buttermilk or sour milk
2 cups rhubarb, finely cut
1/2 cups chopped nuts, optional
1/2 cup grated coconut, optional
1/2 cup raisins, optional
Cream together butter and sugar. Blend i egg and vanilla.
Mix the dry ingredients and add alternatig with the milk to the creamed mixture. Stir in rhubarb and any or all of the optional ingredients, mixing thoroughly. Pour into a greased 9 inch square baking pan and bake at 350 for 30 minutes.

RHUBARB COFFEE CAKE
1 1/2 c. sugar
1/2 c. Crisco
1 tsp. vanilla
1 egg
1 tsp. soda dissolved in 1 c. sour milk or buttermilk
2 c. flour
1/2 tsp. salt
2 c. finely chopped rhubarb & floured using some of the 2 c. flour above
Sour milk - Sour by putting 2 tablespoons lemon juice in a cup measure and fill with milk. Let stand 5 minutes.
Mix the above in order given. Pour in a greased and floured 9 x 13 x 2 inch pan or two pans 8 x 8 inches. Put this topping on before baking: 3/4 c. sugar 3 tsp. butter
Crumble and sprinkle over coffee cake. Bake at 350 degrees for 35-40 minutes.
