Does anyone know how to make spicy thai soup like La Bou?

Hmmm I'm not familiar with La Bou... but I love this recipe... HOT HOT HOT!

2 tablespoons vegetable oil
1 shallot, peeled and sliced
1 (2-inch piece) ginger, sliced
2 fresh serrano chiles seeded, sliced (wear gloves)
4 stalks lemon grass, white part sliced
Juice and coarse zest of 1 lime
2 tablespoons fish sauce
8 cups chicken stock
1 pound medium/large shrimp, shelled
1/4 pound enoki mushrooms
Salt and white pepper, to taste
Garnish: cilantro sprigs

Heat a wok and coat with vegetable oil. Add shallot and saute until it begins to turn brown. Add ginger, chilies, lemon grass and lime and saute until fragrant. Add fish sauce and scrape up any brown bits. Add chicken stock, reduce heat and simmer for 20 minutes. Through a fine sieve into a saucepan, strain out solids. Bring broth back to a boil and add shrimp and enoki mushrooms. Cook until shrimp turn pink. Season and drop cilantro sprigs in soup

Makes 4 servings

Ingredients

6 oz. Sliced White Chicken meat
6 oz. sliced White Onions
2-3 med pieces Galanga( Thai Ginger)
3 - 1" Slices of Lemon Grass
1 oz. chopped Green Onion
24 oz. water
1 package(2 oz.) Coconut Milk Concentrate
4oz. fresh Lime or Lemon Juice
4oz. Fish Sauce
1 tablespoon ground Red Chili
Technique

Start heating the water. Add 1 package coconut milk concentrate, Galanga Ginger and Lemon Grass. Add 6 oz. sliced chicken. Bring to a boil. After the soup has boiled for 2 minutes, add the White Onions and Mushrooms. In your serving bowl add the Lime Juice and Fish Sauce. Do not add this to the boiling soup! When the chicken in cooked, place the soup in the serving bowl with the sauces. Garnish with the Green Onions, spice to taste with red chili and serve
