Answers:
There have been several different answers for this over the ages...some like broiled, the French (and James Beard) like pan fry, some like grilled. These are all good, but here is my favorite way to cook steak:
Grilled Rib or Rib Eye Steak (serves 4)
(this recipe can be used for any grilling steak - I prefer Rib steaks due to the fat content and they can normally be puchased bone in)
For the steaks:
4 - 8 to 12 oz Rib steaks, bone in, over 1 inch thick
2 tablespoons Kosher or Grey Sea Salt (I am using Celtic Grey Sea Salt right now from Brittany, France. It is the best I have ever tasted and has naturally occuring minerals)
2 tablespoons fresh cracked black pepper
1 clove garlic minced and pasted on board with small amount of salt
1 shallot minced very fine
4 tablespoons extra virgin olive oil
For the Grill:
I use a charcoal grill. In my opinion, nothing beats its flavor, heat intensity or clean up.
1/2 bag natural charcoal
some crumpled newspaper
1 charcoal starter ( a charcoal starter is essential - its really no big deal or no big cost. I bought mine for $12 dollars and it holds 1/2 of a lerge bag of natural charcoal)
Place steaks in large zipper type freezer bag and add all other ingredients. Marinate AT ROOM TEMPERATURE while you get the grill ready. (I know that meny people say not to salt protiens for periods of time before cooking due to the fact that salt breaks down the cellular structure and causes the meat to extrude it's liquid. IF the steaks are thick enough, 30 to 40 minutes will break the meat down just enough for the salt and pepper to permeate the meat, making a wonderful tasting steak.) Follow instruction for your charcoal starter and empty charcoal into grill when ready. Place top grate over coals and heat for 5 minutes to get a good sear on the meat. Cook steaks to desired doneness, remove from grill and let rest for 6 to 7 minutes before serving.
Want a good side? While steaks are cooking, trim 1 bunch of fresh asparagus and toss with 2 tbsp olive oil, salt and pepper. Toss them on the hot grill while the steaks are resting after cooking. They will be cooked and ready to serve by the time the steaks have rested.
Bonus: Dessert
Take 4 peaches and halve them. Place them on the grill right before you eat the steak and asparagus. When dinner is finished, remove grilled peaches and make a mix of either 4 tbsp mascarpone or cream cheese and 1/2 cup milk or heavy cream. Top with cream mixture and reduced balsamic vinegar or an aged balsamic.
Other Answers:
I would prepare it on the grill if possible. My husband loves steak though and I have found a perfect way to do it inside. Put a cast iron skillet in the oven at 500 degrees for about 10 minutes. Put the skillet on the stove with the burner at high heat. Add the steak to the skillet and brown the steak on each side. Put the steak back into the oven, in the skillet and cook until desired color.
