Homemade Flour Tortilla
4 cups flour
1 cup tub margarine
2 teaspoons salt
1 cup warm water
2 tablespoons baking soda
Heat griddle (cast iron is best) to medium high. In a large bowl, mix dry ingredients, cut in shortening, add warm water, and knead until formed into dough. Cut dough into 2 inch balls and roll flat with rolling pin. Cook tortillas on griddle about 2-3 minutes on each side. Cooking time is approximate depending upon temperature of the griddle, but cook them long enough to form light brown spots on each side. If the griddle is too hot, the tortillas will scorch, too cool and they become too hard. Note: Practice makes perfect.
