Fudge Lover’s Strawberry Truffle Cake
Prep Time: 25 min. (prep time takes a lot longer if you hand chop the chocolate)
Start to Finish: 2 Hr. 50 min

Cake
1box Betty Crocker Supermoist chocolate fudge cake mix
1 1/3 cups water
? cup vegetable oil
3 eggs
2 cups cut-up fresh strawberries

Ganache
2 packages (8 oz. each) semisweet chocolate, finely chopped
1 1/3 cups heavy whipping cream
? cup butter (do not use margarine)

Garnish
6 fresh strawberries, cut in half lengthwise through the stem
? cup white vanilla baking chips
? tsp. vegetable oil

1. Heat oven to 350F. Spray bottom of 13x9 in. pan with cooking spray. In large bowl, beat cake mix, water, ? cup oil and eggs with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour into pan.

2. Bake 33 to 38 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.

3. Meanwhile, in large bowl, place chopped chocolate; set aside. In 2-quart saucepan, heat whipping cream and butter over medium heat, stirring occasionally, until butter is melted and mixture comes to a boil. Pour cream mixture over chocolate; stir until smooth.

4. Line bottom of 9-inch springform pan with a circle of waxed paper. Cut cake into 1-inch cubes. In large bowl, beat half of the cake cubes on low speed until cake is crumbly. Add remaining cake cubes and 1 ? cups of the ganache (reserve remaining ganache). Beat on low speed 30 seconds, then on medium speed until well combined (mixture will look like fudge). Fold in 2 cups cut-up strawberries. Spoon mixture into springform pan; smooth top. Cover with plastic wrap; freeze 45 minutes until firm enough to unmold.

5. Run knife around side of pan to loosen cake mixture. Place serving plate upside down on pan; turn pan and plate over. Frost side and top of cake with remaining ganache. Arrange strawberry halves on top of cake.

6. In small microwavable bowl, microwave baking chips and ? tsp. oil uncovered on High 45 seconds, stirring every 15 seconds, until melted. Place in small resealable food-storage plastic bag; cut off tiny corner of bag. Drizzle over top of cake. Refrigerate until ready to serve. Cake is best served the same day. 12 servings.

I usually use ganache for a truffel cake. I whip some for the filling and keep some in a fluid state to pour over the cake as icing.

1 cup whipping cream
2 cups chopped chocolate
Flavoring such as nut butter or liquer

Place a heat broof bowl over a pan of barely simmering water. Add cream and heat. When cream is hot add chocolate and flavoring if using. Mix well. Chill part of the ganace until cold and then whip it with an electric mixer until light and fluffy. Use this to fill your cake layers. I like to use raspberry jam over each layer of filling. When cake is assembled, place it on a rack over a cookie sheet and pour the remaining ganache over it.

5 ounces self raising flour
3 1/2 ounces cocoa powder (I used Green & Blacks)
6 ounces unsalted butter, softened
12 ounces golden caster sugar
1 teaspoon vanilla extract
3 large eggs, at room temperature

Ingredients:

1 small Cake
1 Tin Mixed Fruits 2 cup Cream
4 cup Milk
4 tblsp Custard Powder
1 cup Sugar
1/2 packet Strawberry Jelly
1 Apple
1 Orange
1 cup Grapes
4 - 5 Cheery

How to make truffle pudding:
Cut the cake from the middle horizontally. Separate the lower and the upper crust
Beat the cream frothy.
Prepare the jelly as instructed on the packet.
Peel the apple and cut into small pieces.
Peel the oranges also.
Cut small pieces of the grapes.
In 1 cup of milk dissolve the custard powder.
In rest of the milk add sugar and put it on the flame, stiring continously all the while
When this mixture thickens tranfer it in a bowl and put it in the refrigerator to chill.
Take a bowl and place 1 cut of the cake in it.
Pour the custard mixture prepared and sprinkle some mixed fresh and tinned fruit.
Now place another piece of the cake.
Now pour rest of the fruits and the custard mixture.
Pour frothy cream and put some prepared jelly.
Decorate with cherries.
Cool it for some time in the refrigerator and then serve
175 ml milk, at room temperature
TRUFFLE ICING
5 ounces dark chocolate, broken into squares (I used Lindt, with 70 per cent cocoa solids)
2 1/2 ounces unsalted butter, cubed
3 tablespoons double cream (heavy)
DECORATION
2 ounces whole unblanched almonds
2 ounces dark chocolate (use the same type of chocolate as for the icing)
2 ounces white chocolate

10-12 servings Change size or US/metric
