First you need to sort the beans (pick out the ones that are broken and dirty and don't look good) then you need to put them in a pan cover them with water, bring to a boil for about 5 or 10 min., turn the fire off and let them set and soak for about an hour...or overnight in the fridge. then add more water bring to med. boil for about an hour to an hour and a half. During the second boil it's good to add some Ham or bacon or some bacon grease about 2 TBLsp. When they are done they should smash against the side of the pan easily. You will have to keep adding water once or twice during cooking so they don't stick. and add salt to taste after they are done.

boil them...i can imagine it would take forever Dried beans double or triple in volume as they cook, so be sure to use a large enought pan or casserole. When buying or cooking, here's a chart for you:

Amount of beans Equal cups of beans
8 ounces dried 1 cup uncooked
1 cup dried 2 to 3 cups cooked
1 pound dried 2 cups uncooked
2 cups dried 4 to 6 cups cooked
1 can (15 to 16 oz) 1 1/2 to 2 cups
cooked beans, drained

Approximate Simmer time for 1 cup Pinto Beans
1 hour to 1 hour 30 minutes

Approximate Yield 2 to 2 1/2 cups

Basic Directions for cooking dried legumes
1. Sort legumes, discarding any stones or shriveled, small or damaged beans; rinse and drain. Please 1 cup legumes in 3- to 4-quart saucepan (Lentils do not require soaking or precooking.

2. Add enought cold water (about 3 to 4 cups) to cover legumes.

3. Heat to boiling. Boil uncovered 2 minutes

4. Reduce heat to low. Cover and simmer (do not boil or legumes will burst), stirring occasionally, for amount of simmer time in chart or until tender.

When I cook pinto beans. I add plenty of water and add a little of cooking grease, salt, and pepper. And boil them on low all day or even in the crock pot. Make sure beans are tender before eating.
