make some mashed potatoes and freeze them. they reheat easily. just make sure you reheat slow or they will get too thick.

?3 Tbsp melted butter, divided
?6 peeled russet potatoes, cut into 1/8 in. slices
?1 garlic clove
?? cup shredded Gruyere, Swiss, or Cheddar cheese
?? tsp salt
?1/8 tsp black pepper
?1 cup 2% milk, heated

Preheat oven to 425 degrees. Spread an 11x7 in dish with 1 tbsp of butter. Arrange half of the potates in dish, sprinkle with half the garlic, drizzle with half of remaining butter, half the cheese, and half the salt and pepper. Repeat layers. pour hot milk over potatoes.

Bake for 40 minutes or until potatoes are tender, milk is absorbed and top is browned.


Calico Potatoes
?5 lbs potatoes, peeled and quartered
?8 tbs butter, divided
?? cup each, chopped: green pepper, red pepper, onion
?2-3 cloves minced garlic
?? cup chopped fresh parsley
?? cup heavy cream
?? lb processed cheese, cubed
?Salt and pepper to taste
Boil potatoes till tender. Heat 4 tbs of butter in a skillet, sauté peppers and onions. Add garlic and parsley when onions and peppers are soft.
Preheat over to 350; lightly grease 13x9” baking dish.
Drain cooked potatoes and return them to their pan; add sautéed vegetables, remaining butter, cream, cheese, salt and pepper. Mash potatoes and vegetables together until most of the lumps are gone. (This dish is not meant to be creamed) Spoon into baking dish and bake for 45 minutes or until potatoes begin to turn golden.
Garnish w/chopped fresh red pepper and parsley.
Note: I used about 6 small potatoes (not 5 lbs); cut amount of butter about in half; used milk, not cream; but used same quantities of rest of ingredients and baked about 25-30 minutes.


Oh yeah, beer bacon potato cheese soup. Use 10 lbs for that then thin slice the remaining 5 lbs and spice them with steak seasoning and then deep fry them. you could make fried, mashed, or potato soup, potato salad, potato gratin and have me over for dinner

u can makes chips all of them or they can be your food for 1 month Potato salad. Just cut into small cubes, boil. Drain and cool. Mix with mayonaise, mustard, and dash of relish. For extra flavor add in diced onions, hard boiled eggs, or chopped up bacon bits.


--Croquettes--

1tsDijon mustard
2Cloves garlic; crushed
1tbChopped parsley
1tbChopped chives
?tsPepper
2cDried bread crumbs
2Eggs
Self-raising flour
Oil for deep frying

Mash potatoes with mayonnaise, mustard, garlic, parsley, chives, pepper and sufficient flour to make a firm dough. Roll potato mixture into balls. Dip each into egg beaten with 3 Tbsp water, then roll in bread crumbs. Refrigerate coated balls at least 1 hr. To cook, heat oil and deep-fry balls until brown. Serve with your favourite meat.

Instead of serving with meat, you can shred turkey or chicken and mix it in with the potatos before cooking. It's SO good My family loves potato soup with cheese and polish sausage added:

POTATO SOUP

Cut up celery and onion, add to water in large pot
Boil until vegetables are tender
Cut up peeled potatoes and add to water; boil until potatoes are almost done
Add sliced polish sausage, cook till heated through
Add a little butter and some milk, be careful not to curdle the milk
Add salt and pepper to taste
Turn down heat so you don’t curdle the milk and add Velveeta cheese until it has the cheesy flavor you like.
