Ricotta cheese would be good, or a mix of ricotta cheese and ground beef.

Yes, or even mix the cheese with a vegetable you like. I like mixing them with spinach. Olive comes to mind, Ground Sweet Italian sausage, pinoli nuts (pine nuts) are good. There's lots you can do. Use your imagination0 SPINACH- AND CHEESE- STUFFED PASTA SHELLS
Fennel seeds add a flavorful new twist to this vegetarian main course.
2 10-ounce packages frozen chopped spinach, thawed
15 ounces ricotta cheese
1 cup (about 4 ounces) grated Parmesan
2 tablespoons fennel seeds
2 tablespoons chopped fresh basil or 2 teaspoons dried, crumbled
3 garlic cloves, minced
Salt and pepper

3 1/2 cups purchased marinara or spaghetti sauce
32 jumbo pasta shells, freshly cooked
Additional grated Parmesan

Squeeze spinach dry. Transfer spinach to large bowl. Add ricotta, 1/2 cup Parmesan, fennel, basil and garlic to bowl. Season mixture with salt and pepper; blend.

Preheat oven to 350°F. Spoon 1/2 cup marinara sauce evenly over bottom of 9x13x2-inch baking dish. Fill each pasta shell with spinach mixture. Place shells, filling side up, in dish. Spoon remaining sauce over shells. Sprinkle with remaining 1/2 cup Parmesan. Cover loosely with foil and bake until heated through, about 30 minutes. Serve, passing additional Parmesan separately.

You can leave out the fennel seeds if you don't care for them!


1 16oz container ricotta cheese, 1 pkg frozen spinach, thawed, well-drained and chopped, 1 egg, garlic powder, salt and pepper to taste. Mix well and stuff into shells. Also works well with manicotti. For cooking them, put a layer of sauce in the bottom of your pan to keep the shells from sticking, place stuffed shells on suace, lightly drizzle shells with sauce, cover with foil and bake in a 350 oven for 35-45 minutes. You can do a bi-layered stuffed shell:

Mix ricotta and egg and put just a bit in the bottom of each shell, then a mixture of ground beef (or pork or chicken), pasta sauce and finely chopped olives. Bake, and when almost done, lightly sprinkle mozzarella or boconccini cheese on top of the shells.

I use a container of ricotta, 4 oz. shredded mozarella and 4 oz. sharp cheddar, 1 c. fontina cheese, 3 eggs, parsley, salt and pepper. Place into almost fully cooked shells, cover with your favorite sauce and bake at 350 degrees for 30 min or until cheese is nice and bubbly.
