Did you mean 200 C or 200 F. 200 C is 392 F.
If you leave a pot roast at 200 C for an entire day, it will burn. You might even start a fire.
If you leave it at 200 F, I would be concerned that it would not warm up quickly enough to kill dangerous bacteria.
yes-cover it so the water doesnt evaporate away and the meat will be very tender-you can also use a slow cooker
crock pot i dont know about the oven may make your meat tuff

If you are going to be home then sure, if not no. By the way I used work for a very large appliance maker and this is what we are told to tell people. I've seen one to many stories about how someone left on the oven all day and then it catches on fire. I'd use a counter top crock pot.
ARE YOU OUT OF YOUR MIND????? DO YOU HAVE ANY IDEA OF HOW HOT 200c is? That converts to 414 degrees farenheit! ALL DAY? ARE YOU INVITING THE FIRE DEPARTMENT OVER FOR SUPPER?
