i see your problem here, you are wondering why pork looks white but gammon and bacon is red. well gammon has lots of chemicals added to make it pink. Pork is natural and is therefore white!

Pork is the other white meat. Unless you dont cook it all the way through, then it would be pick meat. ANd while I would avoid undercooked pork, who doesnt love pink meat? :-)

But I think while it's closer to white meat than red meat, it itsn't necessarily white. For instance Turkey has a white and a dark meat and I think pork does too. If you buy the lean, prime cut chops it is but I have also bought the value chops, know what I mean? The ones with the darker meat and the more fat, I would call those dark meat.

(lol) Pork is read meat - look at Bacon, Ham, Sausages - they are still a reddish colour, when they are cooked.
