Here are some friends with simlar question as we.And I have this question for many days,anyone help us?

all recipies call for baking soda...what happens if i don't use it?? cuz...i don't have it!
and, i DREAMT about chewy chocolate chip cookies, so i'm going to make it, i just want to know why ppl use baking soda, and what will happen to my cookies if I don't use them?

soda makes the cookies raise when you bake them... if you leave it out they will be like a brick. (you can replace half as much baking powder if you have that.

I think they will become the flatest cookies you have ever seen, you might want to add the Baking Soda for best results.
Baking Soda (Sodium Bicarbonate)
(Rule of Thumb: 1/4 teaspoon for every 1 cup of flour)
1/2 teaspoon 2 teaspoons double-acting baking powder (must replace the acidic liquid in recipe with non-acidic liquid)
1/2 teaspoon potassium bicarbonate
You can substitute baking powder in place of the baking soda, but to do so can produce inconsistent results and is not recommended.

u can use coke instead
soda and powder are both leavening agents with out them the product will not rise, because of the diferenmt way they work one can not be substituted for the other.
both are not expensive so you might want to get some.

You will have flat funny tasting cookies. You really should get the baking soda. They turn out better with the baking soda instead of baking powder although that can be a substitute. Baking really is a science, you should follow the recipe to the letter and only use appropriate recommended substitutions when absolutely necessary.
Baking soda helps to rise and also holds them together.

Baking soda is a leavening agent...it makes them rise. If you don't use it, your cookies will be flat and sorta hard.

Unfortunately, you can't substitute anything for it. Many people think you can use baking powder, but this isn't true. Baking soda neutralizes acid in foods...baking powder does not.
If you don't have baking soda or baking powder if there's no chocolate in the recipe, your food won't rise and they will be flat and hard. It's a pretty common and cheap item to have around, so I recommend getting some. It's an essential item to have in your pantry.
