salt/pepper to taste
Pull apart the chicken breast and dice.
In a large bowl Add the cilantro, tomato and avocado. Add the celery / onion, jalapeno dash of salt/pepper. Add the cabbage and 2 -3 tbsp of mayo or just enough to moisten to your taste. Chill for 1/2 hour and serve cold, topped with the chicken or mix the chicken into the salad.
Serves 1-2 BEEF AND PORK CASSEROLE
1 c. chopped green pepper
1 c. chopped celery
2 c. chopped onions
1 lb. lean ground beef
1 lb. lean ground pork
1 c. butter
2 tsp. salt
3 cloves minced garlic
1 c. chopped stuffed olives
1 c. sliced mushrooms, can or fresh
1 can tomato soup
1 can spaghetti sauce, meatless, tomatoes or mushroom
1 lb. wide noodles
2 c. grated American cheese
In large skillet saute pepper, celery, onion and meat in hot butter. Add salt. Reduce heat and cook 5 minutes. Stir in olives, mushrooms, garlic, soup and sauce. Cook 5 minutes more. Cook noodles and drain. Turn noodles into 14 x 10 x 2 1/2 inch pan. Add sauce gradually, stirring well. Sprinkle cheese on top. Bake at 350 degrees for 35 minutes. This casserole freezes well and can serve 12.
