i dont know about turkish food in particular but i can differenciate most of the spices between dessert and meals
meals - parsley ,thyme ,basil ,cumin,coriander
desserts- cinnamon
but sorry i cant say for sumac reyhan and black cumin
but saffron is used more for the intense colour i guess it cud b used for dessert or main
if u need a more specific answer just search the web for turkish spices or something
