1/2 cup sugar
1/2 cup brown sugar
1/4 cup butter, softened
1/4 cup shortening
1/2 cup peanut butter, plain
1 egg, beaten
1 teaspoon vanilla
1-1/4 cup flour
3/4 teaspoon soda
1/2 teaspoon baking powder
1/4 teaspoon salt
PREPARATION:
In a large bowl, cream sugars, butter, and shortening. Add peanut butter, egg, and vanilla. Mix thoroughly.
Combine flour, soda, baking powder, and salt in a medium bowl. Gradually add to peanut butter mixture until completely combined.
Cover bowl and chill for 1 hour.
Preheat oven to 375 degrees F. Lightly grease cookie sheet(s). Shape dough into 1-inch balls. Place on cookie sheet 3 inches apart. Flatten balls in a criss-cross pattern with a fork dipped in flour. A flour-dipped cookie press or the flat bottom of a small glass may also be used.
Bake 10 to 12 minutes.
Store in a loosely covered container, like a cookie jar, for harder-crisper cookies. For softer cookies, store in an airtight container.

This is my all-time favorite recipe I use all the time. I use the ice cream scoop because it makes nice big cookies. You can use anything but vary cooking time accordingly.
Peanut butter cookies
2 cups shortening
2 cups peanut butter
2 cups brown sugar
2 cups white sugar
4 eggs
3 tsp. vanilla
2 tsp. baking soda
5 cups flour
2 tsp. salt
Mix first 7 ingredients till creamy and add the flour and salt. Drop on ungreased cookie sheets or roll in sugar and place 2 inches apart.. Bake 350 for 8-10 minutes This one is SOOOOO easy and delicious. I got it from Paula Deen's cooking show. Here you go:
1 cup peanut butter, creamy or crunchy
1 1/3 cups baking sugar replacement (Splenda is best)
1 egg
1 teaspoon vanilla extract
Preheat oven to 350 . Grease a large baking sheet (using parchment paper is the best)
In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement. Cool slightly, before removing from pan.

1 cup butter or margarine
1 1/2 cups sugar
2 eggs
2 tsp. vanilla
2 cups unsifted all purpose flour
2/3 cup cocoa
3/4 tsp. baking soda
1/2 tsp. salt
2 cups(12 oz package) Reeses Peanut Butter Chips
Cream butter, sugar eggs and vanilla until light and fluffy. Combine flour cocoa, baking soda and salt, add to creamed mixture. Stir in chips. Drop by tsp. onto and ungreased cookie sheet or chill dough until firm and shape small amounts into balls (about 1 inch). Place on ungreased cookie sheet, and flatten slightly with a fork.
Bake at 350 deg. for 8 to 10 minutes. Cool slightly before removing from cookie sheet. Yield 5 dozen, 2 1/2 inch cookies.
For additional peanutbutter flavor. Sprinkle a few more chips on top one minute before removing from oven.
Variation: omit peanutbutter chips and add white chocolate chips or chunks.
