I also add a pouch(using cheese cloth) of Pickling Spice. The German recipe calls for Burgundy. Alcohol and the amount of, is your option. There is also a taste factor. For saftey sake, let it cure in the refridgerator, not at room temperature. If you like your cabbage soft not crisspy, heat the mixture on the stove to a simmer for 5 mins. before jarring it. This will also remove some of the alcohol, but leave the flavor.
