1/2 c. grated Parmesan cheese
Tomato sauce
Cook rigatoni until just tender; drain and rinse. In large bowl, add butter to pasta; coat well. Add the 3 cheeses and cream. Toss well and add half of the Parmesan. Put mixture in a buttered casserole dish and sprinkle remaining Parmesan. Spoon tomato sauce on mixture. Bake for 20 to 25 minutes at 375 degrees.

Rigatoni with Four Cheeses
Ingredients :
1 lb rigatoni
1 1/2 cup half and half
3 oz gorgonzola cheese, crumbled
3 oz bela paese or talegggio cheese, cubed
3 oz fontina cheese, cubed
1/2 cup freshly grated parmesan cheese
2 tbl chopped fresh parsley
Method :
Cook pasta in salted water until tender but still firm to the bite. Mean while bring half and half to simmer in heavy skillet over medium-low heat. Add Gorgonzola, Bel Paese and Fontina cheeses, stir until melted. Drain pasta and add to sauce.
Toss to coat. Season with salt and pepper.
Transfer to large bowl. Sprinkle with Parmesan and parsley
and serve.
Baked Rigatoni and Ham with Four Cheeses
Ingredients :
3 tbl Butter or margarine, divided
1/4 cup Fine dry breadcrumbs
8 oz Rigatoni pasta, uncooked
2 tbl All-purpose flour
2 cup Milk
1/4 tsp Salt
1/4 tsp Pepper
4 oz Cooked ham, diced
4 oz Mozzarella cheese, shredded
2 oz Provolone cheese, shredded
2 oz Fontina cheese, shredded
1/4 cup Parmesan cheese, freshly grated
Method :
1. Melt 1 tablespoon butter in a small saucepan over low heat. Add breadcrumbs, and toss well. Set aside.
2. Cook pasta according to package directions; drain well. Set aside, and keep warm.
3. Melt remaining 2 tablespoons butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly.
Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Stir in salt and pepper. Add ham and cheeses, stirring until cheeses melt.
4. Add cooked pasta to cheese mixture; stir well. Pour into a buttered 2-quart baking dish. Cover and bake at 375 degrees for 25 minutes or until bubbly. Uncover and sprinkle with breadcrumb mixture. Bake 7 additional minutes or until golden.
This pasta dish is flavor-packed with cheese-mozzarella, provolone, fontina, and Parmesan.
