Hmmm, I know of an almond biscotti, but if you want them soft, just don't bake them hard on the second round in the oven so they stay soft,
but usually, if biscotti recipes have butter or oil, they have a better chance of being on the soft side. Real biscotti recipes with no butter or oil, but just egg to combine the ingredients, usually becomes hard and dry.
