Gatte ki Sabzi is a Rajasthani dish not Gujarati and you have to be a moderately experienced cook to get the gattas right.
Ingredients
Besan (gram) flour 4 - 5 tblsp.
Curds 4-5 large tsp.
Haldi (turmeric) powder 1/2 tsp.
Chilli powder 1 tsp.
Coriander powder 1/4 tsp.
Garam Masala powder 1/4 tsp.
Hing 1 pinch
Oil 2 tblsp.
Method :
1. Mix together all ingredients and bind them in a tight dough.
2. Roll out the dough into cylinders.
3. Put them into boiling water and allow them to cook for atleast 5-6 minutes.
4. Do not throw away the water in which the cylinders were boiled as you would need it later on.
5. Take the boiled cylinders out of water and cut them into rings.
6. Heat oil in a pan and fry the rings till golden brown. Your gattas are ready.
7. Do not dispose off the oil also.
Ingredients for gravy :-
Onion 1 large chopped finely
Ginger-garlic paste 2 full tsp.
Coriander powder 1 full tsp.
Haldi powder 1/4 tsp.
Chilli powder 1/2 tsp.
Curd 1 full tsp.
Tomato 1 large chopped finely.
Garam masala 1/2 tsp.
Method for Gravy :-
1. In the oil used for frying gattas, fry onion and garlic paste for 5 minutes at high flame.
2. Reduce the flame and add the rest of the masalas except for curd and tomato. Fry for approx. 5 minutes at medium flame and then add tomatoes and curd. Fry for another 8 minutes. Add the water used for boiling gattas to make the gravy. Add garam masala.
3. Simmer for 5 minutes and your gravy is ready. Now add gattas to the gravy and simmer for further 10 minutes. Your sabzi is all set.
Note :- The above ingredients serves about 4 adults as a main course dish.

sour butter milk i cup
1tsplal mirch powder
1/4 tsp haldi
1 tsp dhaniyapowder
salt to taste
Method
first mix all the ingredients of gatta with water , make it like a chappati dough , we add oil so that it dosent stick to hand
after making the dough break the dough into different pieces and make the rolls out of those pieces
the roll must be length wise half inch in diameter the length can vary accordingly
take a pan out 3/4 of water put the gattas into it and let it boil
after it is boilt talke it out and cut them in 1 cms long
now take another pan put oil mustard , zeera , kadi patta
then add chilli powder and buttermilk and stir continuosly till its cooked
add haldi and dhaniya powder also add salt and then add gatta to it and cook for 5 min
garnish with dhaniya
