I like mine boiled with skin on in salted water for 20 minutes. Drain & cut in peices. Add salt, pepper & butter. Yum!

Wash them ,and slice them into half inch peices fry them in a good non-stick pan with as little oil as possible.
I clean them, and then steam them with just a little bit of water, they don't take long to cook. so keep an eye on them. When you can poke them with a fork and they are tender they are done. Pour off the water. I then add butter, salt, and I add dried chives, or sometimes dried parsley. Put the lid on for a few minutes to "soften" up the dried veggies and voila! You have a delicious side dish!

Red potatoes make the best potato salad. I use peeled and boiled red potatoes, onion, celery, peppers, relish, mustard, boiled eggs, and miracle whip.
Also, washed and cubed red potatoes boiled with skins left on make a wonderful side dish. Once they are soft just add butter and parsley if available.
Leaving the skins on, quarter them and boil in salted water until tender fork. Pour in about 4-5 Tablespoons of melted butter, salt and pepper to taste, about 2 Tbs. of garlic powder, 1 Tbs. of cayenne pepper, and either fresh or dried parsley (to taste). Stir all together so all is mixed but not smooth--you want it pretty lumpy.
I use red potatoes to make mashed potatoes. I boil them, leave the skins on, mash them, add half and half, margarine and cream cheese. They come out soooooooooo good.
Roast those bad boys! Oven 400, line a jelly roll pan/cookie sheet with aluminum foil. Take your 1 lbs red potatoes, quarter them, douse them with 1/2 cup olive oil/canola oil. Toss with 3 cloves garlic, 2 tablespoos cajun seasoned salt, 1 teaspoon garlic powder, 1 teaspoon black pepper, 1/2 italian seasoning. You can add more chili powder or hot pepper to make it spicy to your likeing. Roast for 35-40 minutes, stirring every 15 minutes. I guarantee you love them.....
