3 cups Chicken or vegetable stock
28 ounce Can of black beans (1/2 reserved)
30 ounce Can of chickpeas (1/2 reserved)
1/2 cup onion, cooked
3 cloves Garlic, roasted
3 T lime juice
1 Jalapeno pepper, seeded
1/4 cup red pepper, diced (reserved)
1/4 cup green pepper, diced (reserved)
1/4 cup yellow pepper, diced (reserved)
1/4 cup scallions, chopped (reserved)
1 t cumin
2 t chilli powder
salt and freshly ground black pepper, to taste
Place all ingredients in container in order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run for 6 to 7 minutes. Reduce speed to VARIABLE, speed #4. Add reserved ingredients. Run for additional 10 seconds. Serve immediately.

1-2 Celery Stalks
1/8 White onion
2 Chicken bouillon cubes
1/4 cup Skim milk powder
1/3 cup Mashed potato flakes
2 1/4 cups Hot Water
Cooked Chicken (optional)
Place all ingredients, except chicken, in container. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run for 2-3 minutes. Reduce speed to VARIABLE, speed #3. Remove the lid plug and add chicken. Run until chicken is chopped, about 15 seconds. Serve immediately.

Prepare
1 clove garlic
1 thick slice onion
4 mushrooms
1 thick slice green pepper
8 slices turkey pepperoni
1/2 teaspoon extra virgin olive oil
1 1/2 oz. (45 mL) Italian sausage - cooked & drained (broken into small pieces)
Chop the above ingredients, and place them into a microwave safe bowl. Cook on high for 2 minutes. Add to cooked ingredients. Set aside.
Mix
2 1/2 cups (600 mL) boiling water
3 large roma tomatoes
5 tablespoons tomato paste
1 teaspoon oregano
1 teaspoon basil
1/4 teaspoon black pepper
3/4 teaspoon salt
1 tablespoon parmesan cheese
Place above ingredients in Vita-Mix container. Secure the lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then HIGH. Run for 1 to 3 minutes or until steam escapes through lid. Reduce speed to VARIABLE speed #3 and remove lid plug. Add cooked ingredients along with 1/4 cup mozzarella cheese to the soup and blend for an additional 5 to 10 seconds.
