Creamy Leek Dip
INGREDIENTS:
1 pound bacon
15 leeks, roots and leaves removed
3 (8 ounce) packages cream cheese
2 large cloves garlic
2 1/2 tablespoons Worcestershire sauce
salt and pepper to taste
DIRECTIONS:
Place bacon in a skillet. Cook over medium high heat until evenly brown. Drain and crumble.
In a food processor, blend the cooked bacon, leeks, cream cheese, garlic, and Worcestershire sauce until smooth. Season with salt and pepper. Refrigerate until ready to serve.
Potato Leek Soup
INGREDIENTS:
1 cup butter
2 leeks, sliced
salt and pepper to taste
1 quart chicken broth
1 tablespoon cornstarch
4 cups Yukon Gold potatoes, peeled and diced
2 cups heavy cream
DIRECTIONS:
In a large pot over medium heat, melt butter. Cook leeks in butter with salt and pepper until tender, stirring frequently, about 15 minutes.
Stir cornstarch into broth and pour broth into pot. Add the potatoes and bring to a boil. Season with salt and pepper. Pour in the cream, reduce heat and simmer at least 30 minutes, until potatoes are tender. Season with salt and pepper before serving.
Leek and Cheese Quiche
INGREDIENTS:
2 tablespoons butter
2 cups sliced leeks
1 (9 inch) frozen pie crust, thawed
1 cup shredded Swiss cheese
1/4 cup grated Romano cheese
1 tablespoon all-purpose flour
4 eggs
1 3/4 cups heavy cream
1 tomato, thinly sliced
salt and pepper to taste
DIRECTIONS:
Preheat oven to 450 degrees F (230 degrees C).
Melt the butter in a skillet over medium heat, and saute the leeks until tender. Spread evenly over the bottom of the pie crust.
In a bowl, toss together the Swiss cheese, Romano cheese, and flour. Spread over the leeks.
In a separate bowl, beat together the eggs and heavy cream. Pour over the cheese layer in the pie crust. Top with the tomato slices, and season with salt and pepper.
Bake 15 minutes in the preheated oven. Reduce heat to 325 degrees F (165 degrees C), and continue baking 30 minutes, until the crust is lightly browned and a knife inserted in the center of the quiche comes out clean.

1/4 teaspoon dried rosemary
1/4 teaspoon dried thyme
1/4 teaspoon dried sage
8 leeks, sliced
2 pounds tomatoes, sliced
1/2 cup shredded mozzarella cheese
1/4 cup butter, melted
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, mix crushed crackers, rosemary, thyme and sage.
Place leeks in the bottom of a large baking dish. Layer with tomatoes and mozzarella cheese. Top with the crushed cracker mixture, and drizzle with melted butter
Bake 30 minutes in the preheated oven, or until golden brown.
